- 2 tablespoons olive oil
- 1 onion,peeled and sliced
- 2 medium potatoes,peeled and diced
- 450g asparagus,washed and chopped
- 1litre water
- Salt and freshly ground pepper
- 2 tablespoons natural yogurt(optional)
- 2 tablespoons chopped fresh herbs, to garnish
Heat the oil in a saucepan and add the onion,potato and asparagus.Cover and cook over a low heat for 10 minutes, stirring occasionally.Add the water,bring to the boil and simmer for about 20 minutes,until the vegetables are soft. Blend and pass through a sieve to remove any fibrous bits.
Season with salt and pepper and reheat.Swirl the yogurt (if using) into the soup and garnish with plenty of fresh herbs.
